Hockey forward Hilary Knight has a serious collection of gold medals: one from the 2018 Olympics -- and seven from world championships. This week, she'll be taking on the world yet again with Team USA, playing for gold at the 2019 worlds in Finland. As she was getting ready to depart, Knight shared one of her favorite simple in-season meals.

What I'm eating: Grass-fed beef tacos
Why I'm eating it: It's healthy and replenishes me, and it's also filling
Whose recipe: I started with a basic online DIY recipe for the spice mix, but I tweaked it by skipping the oregano and swapping garlic paste instead of powder.
1 pound extra lean grass-fed ground beef
1/2 teaspoon garlic paste (you can use powder if you don't have it)
1 tablespoon chili powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
Flour or corn tortillas (I had flour this time)
A pinch of shredded cheddar cheese
1 tablespoon of plain Greek yogurt
3 to 4 sliced banana peppers
A couple pinches of shredded Boston lettuce
Homemade salsa if I have it (store bought works too!)
Brown the beef in a skillet with garlic paste and all the seasonings (the next seven ingredients).
Line a tortilla with a couple spoonfuls of seasoned beef and the rest of the ingredients, and roll up.
I obviously don't eat the whole pound of beef in one sitting, but I love to save the leftovers to eat with pasta the next day. Enjoy!
